How to Make the Perfect Fish and Chips

Fish and Chips is one of our ‘Heifer Classics’, we couldn’t be a Yorkshire pub without it! When people enjoy the traditional dish with us, we always get asked ‘how did you make it like that?’ Well, we have a couple of secrets up our sleeves when it comes to our home cooked food, but we’ve shared some of our tips for making the perfect fish and chips for you here:

The Fish

The key to the perfect fish and chips is making sure the quality of the fish is top notch. It’s important to use fresh haddock or cod, whichever you prefer, and ensure it’s skinned and boned. You can do that yourself, or buy the fish pre-prepared to save you the work.

The Chips

You’ve got to have some excellent chips to pair with the fish when it comes to this classic dish. We’d recommend blanching your chips in a fryer at 130C until soft, and leaving them to cool.

The Batter

There are many different recipes used for creating the best crispy and tasty batter for fish. The best batter should be light and crispy, and a nice golden brown colour, and adding bubbles is a great way to add that lightness which is why we suggesting using beer!

Use 350g plain flour, 300ml malt vinegar, 200ml beer (or water if you prefer) and 3 tsp bi-carb soda, then mix it with a whisk in a large mixing bowl until smooth for a delicious and crispy batter.

Cooking the Perfect Fish and Chips

It’s important to make sure your fryer is filled with clean oil, and the temperature should be set to 190C. Then, flour the fish all over and submerge it in the batter, allowing the excess batter to drip off before placing it carefully in the fryer.

We’d recommend cooking the fish for about 4/5 minutes or until the batter is golden and crispy, be sure to turn it occasionally. Then, drop the chips in the hot fryer for a further 2 minutes so they’re nice soft and fluffy on the inside but crispy on the outside. Finally, add salt and vinegar to your liking!
